I LOVE ALL OF YOUR CREATIONS!

Well, tomorrow is Valentines Day, but we can't have a dinner together, out or even at home tomorrow. So, I made our Valentines Dinner here and we ate by candle light. Danny's "I love you comment" to me was: "I love all of your creations!" And he did. He licked the plate clean.

BUTTERFLY PORK CHOPS WITH APPLE-PECAN STUFFING
CINNAMON-APPLE SWEET POTATO SLICES
HONEY DIJON STEAMED BRUSSEL SPROUTS

Pan Fry Seasoned Pork Chops in Olive Oil on Each Side until Golden Brown
Remove from skillet and make large slice in the middle of the 2" porkchop.
Stuff the Apple-Pecan Stuffing into the Pork Chop Pocket.
Place remaining Stuffing around Pork Chops in 9 X 13 inch greased baking dish.
Cover with foil and bake at 350 degree for 30 min. Uncover and bake an additional 30 min.
Remove from oven and let rest for 5-10 min while plating vegetables. Then plate meat.

Butter a small baking dish. Cover bottom of dish with apple juice.
Peel sweet potato, slice in 1/4 inch rounds and place in apple juice, sprinkle with cinnamon.
Cover with foil and bake 30-45 min. in 350 degree oven.

Steam brussel sprouts. Toss with bacon bits and honey dijon dressing until lightly coated.

ENJOY!

NEW RECIPE FOR YUMMY BREAKFAST

Thought I'd try something new. Danny really liked it. It's kinda healthy too. Enjoy!

BRUNCH SPINACH-EGG BAKE
Pam a baking dish.
Line with frozen spinach that has been defrosted, and squeezed almost dry.
Add a couple tablespoons of your favorite salsa.
Break 2 eggs into the dish
Cover with Mozzarella Cheese
Bake at 350 degrees until eggs are "almost" firm to the touch.
Switch from baking to broiling and broil until top of cheese is toasty.

PECAN BISCUITS
Make a traditional Bisquick biscuit mix, and set aside.
Pulse 4 T. butter and 1 C. Pecans in blender until fine. Add to biscuit mix.
Make drop biscuits. Bake until golden.

SEASON TO SEASON IN BLOOM

I love watching anything move from almost nothing to a surprising chorus of completeness. The Lord God allows this movement in my back yard each and every year through plant life. I'm reminded of a favorite scripture: Let all creation rejoice before the Lord. Psalm 96:13

SNOW DAY - WHAT TO DO?

I'M HOME ALONE. DANNY WENT TO WORK PREPARED TO SPEND THE NIGHT.
THAT LEAVES ONLY A FEW THINGS FOR ME TO DO....
SO I THINK I'LL COOK!
FOUND SOME OVERRIPE BANANAS, SOME FROZEN PEACHES FROM LAST SPRING
PECANS.... AND I CREATED A NEW RECIPE.

BANANA-PEACH-PECAN MUFFINS
Makes approximately 24 muffins.
Preheat oven to 375 degrees.
Spray muffin tins with Pam, or use muffin liners, and then spray the
liners with Pam, so the muffins come out clean.

INGREDIENTS:
2 RIPE BANANAS
1 CUP CHOPPED PEACH PIECES
1 CUP CHOPPED PECANS
2 EGGS
1 PKG. CREAM CHEESE- SOFTENED
1/4 CUP SOFTENED UNSALTED BUTTER

2 CUPS FLOUR
1/2 CUP WHITE SUGAR
1 TEASPOON BAKING POWDER
1 TEASPOON BAKING SODA
1/2 TEASPOON CINNAMON
PINCH SALT
1/2 CUP LIGHT BROWN SUGAR
1 TEASPOON VANILLA

Mash banana mix together with peaches. Set aside.

Cream together softened cream cheese and butter. Add white sugar, then brown sugar and cream together until fluffy.

Add eggs and mix until eggs are well creamed in.

Mix the wet and dry ingredients together by hand, so as to not over mix which will make the muffins heavy instead of light and fluffy.

Alternately mix the banana mixture and the dry ingredients into the creamed butter/cream cheese/ sugar mixture. This will be a little lumpy and that is good.

Add vanilla and pecans and mix.

Spoon muffin batter into muffin tins and bake at 375 degrees until toothpick inserted in center of muffins comes out clean. Approximately 20 min.
I took the liberty to drizzle a little powdered sugar frosting over each muffin for just a touch of extra sweetness. These muffins are not extremely sweet on their own, but they are nice and moist.

ENJOY!

Do you see that cute Dragonfly Vase?
It's really a rain gauge I found at Tuesday Morning. Too cute for a rain gauge!
Happy Snow Day.
