BLUEBERRY BREAKFAST BAKE

This breakfast bread is very custardy, and rich and a 9X13 inch pan will serve more than you think. You can make this the evening before and bake it in the morning.
My friend Diane once again gave me this fabulous recipe. When I got ready to make it I didn't have all the ingredients. So, here is what my Blueberry Bake looked like and the recipe I used follows.

** This recipe takes about an hour and a half from refrigerator to serving.**

Ingredients:
1 16 oz. sweet bread (I used an Italian Sweet Bread Baguette from Kroger's) cut into cubes.
1 12 oz. frozen blueberries (I used Wal-Mart Great Value Brand)
1 8oz. Neufchatel Cheese, softened (cream cheese)
1/2 C. Sugar
8 eggs
1 C. Sour Cream
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
2/3 C. Half & Half
Maple Syrup or Honey (optional)

Directions:
Place the bread cubes in a greased 9 X 13 inch baking dish, mixing in the frozen blueberries.
In a mixing bowl, beat the cheese, and sugar until smooth. Beat in the eggs, sour cream, vanilla and cinnamon. Gradually add half and half until blended, pour over bread and blueberries.
Cover and chill overnight in refrigerator.

Remove from refrigerator 30 minutes before baking. Preheat oven 350 degrees. Cover breakfast bread with foil and bake 30 minutes. Uncover and bake about 25 minutes longer, or until knife inserted near the the center comes out clean. Let stand 5 minutes.

Serve warm with syrup/honey.

TWO NEW FAVORITES

SPRING EVENING SOUP
(Cream of Artichoke)
A yummy side bread is similar to PW Olive Bread. This is my take on the recipe.
Slice Italian bread into thin 1" slices.
Cream: 1 pkg. cream cheese & 1 - 4oz. can sliced black olives & 4oz chopped green olives.
Spread on bread. Sprinkle with Romano Cheese and Toast under Broiler.

SOUP:
1 Stick butter
1 small yellow onion - diced
3 T. flour
1/2 t. salt
/14 t. white pepper
1/4 t. chopped garlic (I used the kind in the jar)
4 C. Chicken Stock
1 C. Heavy Cream - Whipping Cream
1 Bay Leaf
1 medium white potato diced
2 medium carrots diced
1/4 t. poultry seasoning
2 cans Artichoke Hearts- drained

Melt butter in large dutch oven type pan. Add diced onion and cook over medium heat until onion is transparent. Add flour, salt, and pepper, and stir into a Roux. When thick, add chicken stock slowly, constantly stirring making sure it doesn't clump and become like paste.
Add garlic, bay-leaf, potatoes, carrots, Artichoke Hearts, and poultry seasoning. Cook over low heat until potatoes and carrots are tender.
Remove bay-leaf, add heavy cream stirring in slowly until soup is creamy.
Continue to warm over low heat and stir occasionally.
Serve warm and sprinkle with Romano Cheese if desired.
